Aquavit (Snaps)

No Swedish celebration is complete without snaps (a small glass of aquavit) — that tiny, ice-cold glass of spiced spirit raised with a "Skål!" before being drained in a single, decisive swallow. Aquavit (water of life) (also spelled akvavit) is Scandinavia's signature spirit, and in Sweden it is inseparable from the great holidays, the herring table, and the raucous snapsvisor (drinking songs) that punctuate every festive meal.

Sweden's relationship with alcohol has been complicated. The temperance movement of the late 19th and early 20th centuries profoundly shaped Swedish alcohol policy, leading to rationing systems (the Bratt system, 1919–1955) and eventually the creation of , the state alcohol monopoly. Home distillation (hembränning (home distilling)) was outlawed in 1860 but persisted illegally for decades.

Despite — or perhaps because of — these restrictions, aquavit retained its sacred place at the Swedish festive table. It was too deeply entwined with holidays and tradition to be suppressed.

How to Drink Aquavit

The Ritual

  1. Chill — Aquavit is served ice-cold, straight from the freezer. The bottle should be frosted
  2. Pour small — Into a snapsglas (snaps glass) — a small, stemmed glass holding 2–4 cl
  3. Raise — Hold the glass at chest height, make eye contact with those around the table
  4. Sing — Before drinking, Swedes sing a snapsvisa (drinking song). This is non-negotiable at festive meals
  5. "Skål!" — The toast: "Skål!" (pronounced roughly "skole"), said with eye contact
  6. Drink — In one smooth swallow. Place glass down definitively
  7. Eat — Aquavit is always consumed with food, particularly pickled herring, cured fish, or the smörgåsbord. Never drink snaps without food

Snapsvisor — Drinking Songs

Snapsvisor (drinking songs) are an essential element of the Swedish aquavit ritual. These short, often humorous songs are sung communally before each round of snaps. The most famous include:

  • "Helan Går" — "The whole (glass) goes down" — the most iconic snapsvisa, sung at virtually every Swedish celebration. Begins: "Helan går, sjung hopp faderallan lansen hej..."
  • "Halvan" — "The half" — traditionally sung for the second glass
  • "Tredansen" — For the third glass, and so on through a series of numbered songs
  • Humorous snapsvisor — Hundreds of comic songs exist, many improvised, touching on frogs, herring, weather, and romantic misadventure

  • Skåne Akvavit — A southern Swedish variety, clean and caraway-forward
  • Bäska Droppar — "Bitter Drops" — flavoured with wormwood, an intensely herbal, acquired-taste spirit
  • Hallands Fläder — Elderflower-flavoured aquavit from Halland province — lighter, sweeter, and popular with those who find traditional aquavit too strong
  • Absolut — Primarily known as a vodka brand, but Absolut's parent company (The Absolut Company, Åhus) is also a major aquavit producer
  • OP — The affectionate shorthand for O.P. Anderson, as in "Pass the OP"

Craft Aquavit

A craft aquavit movement has emerged in recent years, with small distillers experimenting with botanicals beyond the traditional caraway-dill palette: birch, juniper, sea buckthorn, and local herbs. Spirit of Hven, Hernö (primarily a gin distillery), and several farm distillers are producing innovative small-batch aquavit.

The cultural expectation is that aquavit is consumed in moderation, within the ritual of the meal, among company.
